Microbiology Standards
This document defines the microbiological limits for Dinweys frozen french fries, sampling protocols, testing frequency, positive release procedures, environmental monitoring targets, and corrective actions for out-of-spec results.
Microbiological Limits

Positive Release Protocol

Key Insight: Frozen storage (−18°C) does not kill bacteria — it only stops growth. Salmonella and Listeria survive freezing and remain viable for the full 24-month shelf life. A pathogen-positive finished product is a critical food safety event regardless of storage temperature. This is why environmental monitoring in the post-blanch zone (where no further pathogen kill step occurs) is more important than final product testing.
Significance of Each Microorganism in Frozen French Fries
Total Plate Count (TPC)

Staphylococcus aureus

Salmonella

Listeria monocytogenes

Bacillus cereus

*Note on EU Listeria limits: EU Reg 2073/2005 differentiates between RTE (ready-to-eat) foods. Frozen french fries are not RTE — they require cooking. However, some member states apply strict absent/25g as a best practice. Buyer requirements may override regulatory minima.
